Wine obtained from vineyards that are over 60 years old, located on the coast, in soils that are reddish in colour, revealing their ferrous content mixed with marine and calcareous rocks. The result of a selective manual harvest carried out in the second ten days of September, which allows the selection of the most sparse and mature bunches. Long and strictly temperature-controlled fermentation, followed by long maceration and constant micro-oxygenation, are needed to obtain an alcohol content of 19% and a product that is unique in its kind. The grapes are softly pressed, giving the wine a beautiful garnet shade with strong and intense highlights. It ages in steel for 12 months, with a brief passage in oak barriques,
before spending eight months ageing in the bottle. Characteristic notes reminiscent of plums, redcurrants and red fruit in alcohol. Absolute persistence with memories of chocolate and liquorice. Powerful but sensual on the palate, never predictable; a wine that rests on tannins of outstanding character and elegance, which gives life to an extraordinary balance thanks to its high alcohol content. Recommended pairings: elaborate pasta dishes, grilled or braised meat, game and mature cheeses. We recommend uncorking at least two hours before serving at a temperature of 18°C. Excellent wine for meditation, for evenings with friends or accompanied by a good cigar next to an open fire.
