GRAPE VARIETIES

The wines produced are divided roughly as follows: 65% Primitivo di Manduria, 15% Negroamaro, 7% Fiano, 5% Aleatico, 5% Chardonnay and 3% Moscato. The vines are trained using with the espalier or the alberello method. The grapes are always harvested strictly by hand and the Primitivo grapes are harvested twice, with the largest bunches being picked first, in August. The remaining bunches are left to develop a higher sugar content, which will yield a higher alcohol content, and are harvested about two weeks later in mid-September.
