Wine made from vines trained using the espalier method in vineyards in the splendid town of Manduria, which offer us healthy and perfectly ripe bunches of grapes with which to make a classic and traditional Primitivo Passito, made the way our grandparents used to make it. Withering on the vine resulting from a late, manual harvest with selection of the bunches, and fermentation carried out strictly with the help of temperature-controlled fermentation tanks that ensure optimal balance between alcohol and residual sugar are at the heart of this product, which is greatly appreciated and valued by our customers, especially women. Ageing in steel for about six months and a further six months’ bottle
ageing. It has an intense red colour verging towards violet. The decisive bouquet features warm scents that open up to a smooth, sweet and delicate palate laced with spices that express a range of fruity notes, primarily cherry and plum. Its structure makes it easy to combine with a wide range of desserts. It is also excellent with fruit salad or fruit tarts and is the perfect partner for after-dinner conversations and thoughts. Some people even drink it with a whole meal, given the fact that it is not excessively sweet.
