Made from 100% overripe Aleatico grapes trained using the espalier method on the Manduria plain, this wine undergoes alcoholic fermentation in steel tanks, during which the skins remain in contact with the must for one night only. They are subsequently separated and complete their strictly temperature-controlled fermentation slowly, with successive ageing, first in stainless steel for about four months and then for another four months in the bottle. A wine with a strong temperament but, at the same time, delicate and soft, it reaches its finest expression supported by its 15% alcohol content at a serving temperature between 10° and 13°;
consequently, we recommend serving it cool but not chilled. Its name is testimony to a rosé wine which is anything but ordinary, due to its alcohol content of 15% and for the unusual vinification of this grape in the rosé version. The colour is a combination of cherry pink and onion skin; the characteristic aroma of the grape stands out with clear hints of forest fruits, red apple and cherry. Velvety on the palate and, at the same time, warm and persistent, as a consequence of its significant alcohol content. This wine pairs well with shellfish or fish dishes such as baked grouper or scorpion fish soup. Also good with “turf” starters thanks to its pleasant acidity.
