Wine made from Negroamaro vines that are at least 50 years old, on average, trained using the alberello method. This wine requires perfectly ripe grapes, strictly selected and picked by hand. Long and strictly temperature-controlled fermentation, followed by long maceration and constant micro-oxygenation, are needed to obtain an alcohol content of 15% and a product of excellence in its category. The wine then ages for eight months in steel tanks, followed by three months in oak barriques and six months’ bottle ageing. Particularly well-suited to ageing
thanks to its evident acidity and tannins, which preserve its evolution in time. With its beautiful bright red colour, Inizio Negroamaro offers a broad and seductive bouquet, with full and persistent notes of small black berry fruits. Dry but velvety, full and balanced on the palate. A wide range of pairings enhance its aromatic profile. The important thing is to choose robust and tasty dishes. It goes well with “ciceri” and “tria”, is excellent with stewed kale and delicious with a plate of cannelloni, but also with meatballs and chunks of meat in sauce, or with grilled meat
