Wine made from vines that are at least 60 years old, on average, trained using the alberello method. This wine requires the grapes to wither on the vine, and the late harvest is carried out exclusively by hand. Strictly temperature-controlled fermentation makes it possible to obtain the right balance between alcohol and residual sugar. The wine then ages for 12 months in steel tanks, followed by twelve months’ bottle ageing. The overwhelming aroma
