DESIGNATION OF PROTECTED ORIGIN
Wine made with Aleatico grapes grown in a vineyard that is thirty years old, trained using the espalier method with spurred cordon pruning. This wine requires the grapes to wither on the vine, and the late harvest is carried out exclusively by hand. Temperature-controlled fermentation makes it possible to obtain the right balance between alcohol and residual sugar. The wine then ages for 12 months in steel tanks, followed by six months’ bottle ageing. A deep red wine with violet hues and heavy, defined arches. It has a deep and aromatic bouquet,
with an extraordinary impact in terms of intensity and frankness, characterised by a backbone of important memories of ripe dark fruit and jammy berries. Herbaceous and spicy sensations emerge in the finish. Soft and warm, velvety and sometimes sweet mouthfeel with an elegant tannic texture and lingering persistence. This is an eclectic, smooth red with an important quantity of residual sugar, and, as such, it pairs well with white meats, soups and mature cheeses, and especially with sweet treats like biscuits, chestnuts and dark chocolate.
