Wine made from vines that are at least 70 years old, on average, trained using the alberello method. This wine requires perfectly ripe grapes, strictly selected and picked by hand. Long and strictly temperature-controlled fermentation, followed by long maceration and constant micro-oxygenation, are needed to obtain an alcohol content of 16% and a product of excellence. The wine then ages for 12 months in steel tanks, followed by 12 months in oak barriques and six months’ bottle ageing. A bright garnet red wine with violet hues and an ethereal,
fragrant, spicy aroma with hints of red berry fruit, bitter almond and vanilla, and a finish enriched with liquorice and unsweetened cocoa; dry, warm, complex, intense and concentrated, with a pleasantly tannic background. Impeccable with tasty and robust pasta dishes, such as bucatini or “sagne ncannulate” with ragout, or with main courses such as game, meat roulades with sauce or grilled meat. Delicious with medium and very mature cheeses. It can also be classed as a “meditation wine”, sipped slowly to capture all the nuances of its rich bouquet.
