Wine made from vines trained using the alberello method, with an average age of at least 40 years. The resulting grapes are splendid, and we pick them by hand and make them into a full-bodied and potent Primitivo di Manduria. The grapes are harvested when they are fully ripe and ferment for 18 days at a temperature between 20 and 25 degrees Celsius. The wine then ages for 12 months in steel tanks, followed by eight months’ bottle ageing.
An austere Primitivo di Manduria DOC with a rich and juicy palate. A very deep colour, verging towards violet. The bouquet reveals aromas reminiscent of perfectly ripe black and red fruits of the forest, just ready to be picked. Full-bodied, warm, smooth and persistent in the mouth. Very versatile in the kitchen, it goes well with rich and deliciously flavoured dishes, such as roast meats, baked lasagne and pasta with meat sauce.
