DESIGNATION OF PROTECTED ORIGIN
Wine made from vines trained using the alberello method, with an average age of at least 40 years. The resulting grapes are splendid, and we pick them by hand and make them into a full-bodied and potent Primitivo di Manduria. The grapes are harvested when they are fully ripe and ferment for 18 days at a temperature between 20 and 25 degrees Celsius. The wine then ages for 12 months in steel tanks, followed by six months in oak barriques and six months’ bottle ageing. A Primitivo
di Manduria DOC which is ruby red in colour with orangey highlights created by ageing in barriques. Olfactory analysis reveals an intense aroma of overripe red fruit, such as plums, blueberries and cherries, along with spices, primarily tobacco and vanilla. Full-bodied with a smooth mouthfeel and tannins softened by ageing. Ideal with roast or braised meats, and mature cheeses, especially local specialities such as “marretti”, roast lamb horse meat chops served in sauce.
